Harvest Tempeh "Chops"



This is a veganized and scaled down version of an old family pork chop recipe.

one 8 oz pack of tempeh
soy sauce
liquid smoke
fresh ground pepper
onion powder
garlic powder
thyme
2 apples, peeled and sliced
1 cup of cranberries
1 cup apple cider
1/4 cup brown sugar

serves 2-3

Slice the tempeh into 2 or 3 squares and coat with soy sauce, a couple drops of liquid smoke on each piece, and season with fresh pepper, onion powder, garlic powder, and thyme. Let marinade for an hour, or all day while at work. Preheat oven to 350. Brown the tempeh in an oiled skillet over medium heat. Combine the apples, cranberries and sugar and place in the bottom of a baking dish. Place the tempeh on top, then cover with apple cider and bake, uncovered for one hour. Best served with mashed potatoes and green beans.

Nice combination of seasoned tempeh with apples, cranberries, apple cider and brown sugar.

Would probably also try this recipe using seitan roast or Bryanna Clark Grogan's Soy & Seitan Turkey in place of the tempeh.

Hello recipe creator! I don't have cranberries. Do you think I could double-up on apples?

What kind of cranberries are we talking about-- fresh or dried?

i would think double apples would be good. maybe add some raisons if you have them?

i think this is for fresh, but i don't think dry will totally mess it up.

Sorry it took me so long to respond. I use either fresh or frozen cranberries. I don't think dried will really work. If you leave out the cranberries or sub dried & sweetened, I would also leave out the sugar because the sugar balances out the tartness of the cranberries. Thanks to whoever took the pic!!! It looks great!

MDVegan Says... Yum! I followed your advice and omitted the sugar and doubled the apples. I simmered the tempeh a bit before marinating.

To everyone else: If you haven't already, TRY THIS!

PS - I served with roasted potatoes and carrots and kale.
