Pumpkin Tahini Soup

1/2 of a small - medium sized onion (finely chopped)
2 large cloves garlic (finely chopped)
1 tsp. olive oil
2 C vegetable broth
1 (15 oz.) can pumpkin
1/2 C tahini
1 Tbsp. dijon mustard
1/2 tsp cumin
1/2 tsp curry
salt and pepper to taste
Cut up onion and garlic and sauté with olive oil until onions
are clear. Add the vegetable broth and let warm up a little bit
Add can op pumpkin, tahini, and mustard. stir until smooth and warm.
Add curry, cumin, salt, and pepper.
Let cool for a bit, put in vitamix/food processor and blend until smooth. serve.
